Description

Removing garlic's papery skin begins by separating individual cloves from the bulb. Placing a clove flat on the cutting board and pressing it under a chef's knife crushes it just enough to loosen the skin, which can then be peeled off easily. For crushed garlic, the clove is pressed again under the knife to flatten it further, which imparts a stronger garlicky taste in dishes. For sliced garlic, the clove is cut lengthwise into thin pieces by running the knife carefully over it. Mincing is achieved by repeatedly chopping the clove finely, creating small bits that disperse garlic flavor evenly throughout the dish.

Peeled and prepared garlic should be stored in an airtight container in the refrigerator for up to 5 to 10 days to maintain freshness and avoid odor contamination. This preparation ensures garlic is ready for use in various recipes that require different garlic textures and intensities.

  1. Using your fingers, open and separate the cloves from the garlic root.
  2. Take one clove and lay it flat on a chopping board. Place the flat side of a chef's knife over it and lightly press to crush and loosen the skin from the clove.
  3. Peel the skin away from the clove and discard.
  4. For Crushed Garlic: Place the flat side of a chef’s knife over the garlic and press to crush again.
  5. For Sliced Garlic: Keeping the knife in one hand and the other on top of the blade, run the knife slowly over the clove, from left to right, to slice them to your desired thickness.
  6. For Minced Garlic: Keeping the knife in one hand and the other on top of the blade, run the knife repeatedly over the cloves, from left to right, to mince them to your desired size.
