How to Freeze Garlic
Description
Freezing garlic extends its shelf life and preserves its flavor. The process starts with peeling garlic cloves, which can be done by hand, by using a peeler tube, or by shaking unpeeled cloves in a mason jar to loosen skins. Any green sprouts or stems are trimmed from peeled cloves to improve flavor. The cleaned garlic is pulsed in a food processor until evenly minced or processed further into a paste, depending on preference.
The garlic paste is then transferred into small freezer-safe storage bags. Using a knife, the surface of the paste in the bag is scored into approximately 1-inch squares, each containing about 1 teaspoon of garlic paste. This allows portions to be broken off easily for cooking without thawing the entire batch. Frozen garlic paste can be used directly in various recipes for convenience.
Using a food processor with a metal blade offers efficient mincing, but sharp knives and coarse salt can also be used to prepare garlic if a processor is unavailable. Store frozen garlic paste for up to 3 months to retain optimal flavor and freshness.

Instructions
- If garlic isn't peeled, peel it by hand, or by using a peeler tube or by using the shaking method inside a mason jar. Just place unpeeled garlic cloves inside a clear mason jar, screw on the lid and shake vigorously until all the peel is removed.
- Using a paring knife, remove any green sprouts or brown stems from the individual peeled garlic cloves.
- Add the garlic cloves to a food processor fitted with a metal blade. Process in short pulses until the garlic is evenly minced. Be sure to stop and scrape down the sides as needed. You can stop when its just minced or continue until it becomes a paste. I prefer the paste.
- Transfer the garlic paste into small freezer safe storage bags. You can use a knife to draw lines to partition small 1 inch squares, which will be equivalent to about 1 teaspoon of garlic paste.
