Ingredients

Servings
  • 15 lices rye bread swirled
  • 15 lices pumpernickel bread swirled
  • 15 lices corned beef (sandwich slices)
  • 15 lices swiss cheese
  • 1 cup sauerkraut
  • 1/2 cup Thousand Island dressing or Russian dressing
  • 1/4 cup pickle relish sweet
  • 1 1/2 teaspoons horseradish prepared
  • 6 tablespoons butter melted

Instructions

  1. Preheat the oven to 350 degrees F. Brush 2 tablespoons melted butter on the bottom of a large 13X18 inch rimmed baking sheet.
  2. Cut the bread slices in half, and place 15 halves on the baking sheet. Place a slice of corned beef on each half-slice of bread, folding it over if needed, so it fits on the bread.
  3. In a small bowl, mix the 1000 island dressing, relish, and horseradish together.
  4. Spoon the dressing on each piece of corned beef. Add sauerkraut on top of the dressing.
  5. Then top each sandwich with a slice of swiss cheese and another half-slice of bread.
  6. Brush the tops of the bread with butter. Bake for 15-20 minutes, until the cheese is melted and the bread is crispy.

Notes

  • You can also use small rye and pumpernickel rolls if you can find them.
