How to Make Chimichurri

Chimichurri is a bright, herbaceous sauce made from chopped parsley, garlic, shallot, oregano, and a blend of vinegar and lemon juice, finished with crushed red pepper and olive oil. The sauce is quickly pulsed in a food processor to a thin, runny consistency, offering a fresh and tangy complement to grilled meats or vegetables.

Description

The How to Make Chimichurri recipe uses fresh parsley and garlic combined with minced shallot and oregano to build a flavorful fresh herb base. Red wine vinegar and lemon juice provide acidity and brightness, balanced with subtle heat from crushed red pepper and seasoning with salt and pepper. Olive oil is gradually added while pulsing to form a smooth but slightly textured thin paste. The preparation method focuses on pulsing rather than pureeing to maintain some herb texture.

Chimichurri makes a vibrant condiment that enhances the flavor of grilled or roasted meats, adding a lively, tangy, and mildly spicy note. It can also be used as a marinade or drizzle for vegetables.

This sauce should ideally be used fresh for the best flavor, but it keeps refrigerated for up to three days, allowing the flavors to meld further.
