How to Make French Fries
Description
This recipe for French fries begins by slicing large russet potatoes into evenly sized matchsticks, optionally leaving the skin on. The fries are soaked in ice-cold salted water to remove excess starch, which helps achieve better crispness. After drying, the fries are microwaved covered to partially cook and soften them.
Vegetable oil is heated on a sheet pan under a low broiler, creating a shallow hot cooking surface. The fries are then arranged in a single layer over the oil and seasoned with a blend of garlic salt, oregano, and blackened seasoning, which adds a savory, mildly spicy flavor with herbal notes. Broiling the fries turns them golden brown and crisp on the outside while maintaining fork-tender interiors.
The recipe suggests that for extra crispiness, the fries can be baked at 350ºF for about 20 minutes. This approach offers an alternative to traditional deep-frying, using only minimal oil and broiling for texture.
Ingredients
- 3 russet potatoes cleaned, large
- 1 tablespoon salt
- 2 cups water ice cold
- 1/3 cup vegetable oil or canola oil
- 1 teaspoon garlic salt
- 1 teaspoon oregano
- 1 teaspoon blackened seasoning
Instructions
- Cut 3 potatoes into ¼- ½” matchsticks and rinse under water to remove some of the starch. I kept the peel on, but you can choose to peel your potatoes.
- Combine salt and ice-cold water into a bowl.
- Place chopped potatoes into bowl and soak for 5-10 minutes.
- Pat potatoes dry and place in a dish and work in batches by laying potatoes in a single layer. Microwave covered for 3-4 minutes or until almost fork tender.
- Pour vegetable oil onto a sheet pan or 9x13 inch dish.
- Place pan in oven and turn on broiler on low. Broil oil on low for 2-3 minutes or until oil has heated. Watch it closely!
- Sprinkle potatoes with garlic salt, oregano, and blackened seasoning
- Take pan out of oven and carefully arrange potatoes on top of oil in a single layer.
- Place fries in oven on middle rack and cook for 5 minutes on low broil or until golden brown.
- Turn fries over and cook for an additional 3-5 minutes or until golden brown and fork tender.
Notes
- Soak cut potatoes in salted ice water to reduce starch and improve crispness.
- Microwaving partially cooks potatoes before broiling, expediting the process.
- For crispier fries, bake in a 350ºF oven for approximately 20 minutes after broiling.
- Season fries just before broiling with garlic salt, oregano, and blackened seasoning for balanced flavor.
