Instructions

  2. Crack an egg into a small bowl. Gently slide the egg into the skillet. Repeat with the second egg and cook 4 minutes or until the whites are set and the yolk is soft and yellow.
  3. Transfer eggs from the pan to a plate immediately so they don't overcook.
  4. Season with salt & pepper to taste.

Notes

  • Flip eggs carefully after 4 minutes for over easy with a slightly runny yolk, cooking 30 seconds more.
  • To baste, add 2-3 tablespoons water and cover pan after whites start setting; cook 2-3 minutes more.
  • Increase cooking time 1-2 minutes if firmer yolks are preferred.
