How to Make Fruit Leather

Fruit Leather is a homemade dried fruit snack made by pureeing fruit with lemon juice and optional sweetener, then slowly dehydrating it until it peels easily from parchment. This method preserves fruit flavor in a chewy, concentrated form suitable for snacking. It adapts to various chopped fruits and allows sweetness adjustments.

Description

How to Make Fruit Leather involves blending chopped fruit with lemon juice and optional sweetener to create a smooth puree spread thinly on parchment-lined trays. Baking at a low temperature slowly dries the puree over several hours until it is no longer sticky and can be peeled off easily, forming a flexible, chewy fruit snack.

The process concentrates fruit flavor and removes moisture to preserve it in a shelf-stable form. The texture is leathery yet pliable, making it easy to cut into strips and store. Lemon juice acts as a preservative and adds brightness.

This homemade fruit leather is suitable for a wholesome snack and can be tailored with different fruit combinations. It is best stored tightly wrapped in the refrigerator to avoid moisture that can lead to mold. While theoretically shelf-stable at room temperature, refrigeration is recommended for safety.

Ingredients

Servings
  • 4 cups Fruit chopped (apples, berries, peaches, pears)
  • ½ teaspoon lemon juice
  • 1-2 tablespoons sweetener optional, of choice

Instructions

  1. Preheat the oven to 150F or the lowest temperature your oven will go, and line a 11 x 17 rimmed baking tray with parchment paper.
  2. Place the fruit, lemon juice and sweetener (if using) in a food processor or blender and puree until the mixture is smooth.
  3. Pour the puree onto the lined baking tray, spreading out evenly using a spatula.
  4. Place on a low rack in the oven and cook until the fruit feels dry to the touch and peels easily from the parchment paper, about 6-8 hours.
  5. Remove from oven and allow the fruit leather to cool completely, at least one hour.
  6. Use a pizza cutter, knife or scissors to cut into thin strips with the parchment paper still intact. The parchment paper will carefully peel off when you’re ready to enjoy them.

Notes

  • Store fruit leather wrapped tightly in the refrigerator to prevent moisture and mold.
  • Use fresh or frozen fruit chopped into small pieces before pureeing for even drying.
  • Adding lemon juice brightens flavor and helps preserve the fruit leather.
  • Optional sweetener can be adjusted based on the fruit's natural sweetness.
  • Dry at low heat for 6-8 hours until the leather peels easily from the parchment.
