How to Make Gravy

This gravy recipe uses turkey drippings enhanced with a cornstarch slurry to thicken and season the sauce. After skimming off fat from the drippings, the mixture is simmered and adjusted for saltiness before the cornstarch-water mixture is gradually added. The process yields a smooth, seasoned gravy suitable for serving with turkey or other meats.

Description

The gravy starts with skimming fat from about ¼ to ½ cup of turkey drippings, which are left to settle in a sauce pot. Cornstarch is mixed with water to create a slurry that will thicken the gravy. The drippings are brought to a simmer, and saltiness is tested and adjusted by adding water if necessary to balance the flavor.

Once the drippings are ready, the cornstarch slurry is incorporated slowly, stirring constantly and allowing the gravy to return to a boil and thicken before adding more. This gradual process helps prevent lumps and achieves the desired consistency. Any remaining slurry can be saved for another use if not all is needed.

This simple method produces a lightly thickened gravy with the base flavor from turkey drippings, useful as a complementary sauce to meat dishes. The straightforward ingredients and technique make it an accessible recipe for home cooks.

Ingredients

Servings
  • turkey drippings about ¼ - ½ cup
  • 2 tablespoons cornstarch
  • ¼ cup water
  • salt to taste
  • black pepper to taste

Instructions

  1. Carefully pour all drippings into a sauce pot and allow to sit for 5 minutes. Use a spoon to skim off the fat.
  2. Whisk together the cornstarch and water in a small bowl to remove lumps.
  3. Bring drippings to a simmer, taste to determine if it is too salty. If too salty, add one tablespoon of water at a time until the flavor is where you want it.
  4. Slowly whisk in the slurry into the drippings a little at a time and allow for the gravy to come back to a boil and thicken before adding more. You may not need to use all the slurry. Save anything leftover for another use.
