Description
To make hard boiled eggs, place large eggs in a pot covered by an inch of cold water. Bring the water to a boil, then cover and turn off the heat, letting the eggs cook in the residual heat for 9 to 12 minutes depending on desired doneness of the yolk. After cooking, transfer eggs to ice water to halt cooking and facilitate peeling.
This method avoids aggressive boiling which can crack eggs or cause rubbery yolks, producing tender whites and yolks cooked through but not overdone. The ice bath stops cooking and cools the eggs quickly for easier shell removal.
These eggs can be used in salads, sandwiches or eaten on their own. The timing lets you adjust firmness, and freshness of eggs affects peeling ease, with older eggs peeling more easily.
