Description
The process begins by whipping high-fat heavy cream in a food processor or mixer until it overwhips and separates. The yellow butterfat solids separate from the cloudy buttermilk liquid. Adding ice-cold water helps release more buttermilk. The mixture is strained through a sieve to separate the butter solids from liquid buttermilk, which can be saved for baking or marinades.
The butter solids are then squeezed by hand or cloth to remove remaining buttermilk to prevent sogginess. Salt is stirred in if desired for taste. The final product is soft homemade butter, made entirely from fresh cream with a natural separation method. This allows control over salt level and opportunity to add flavors.
