How to Make Horseradish Sauce

This Horseradish Sauce blends freshly grated horseradish root with sour cream, white vinegar, and salt to create a creamy, tangy condiment with a sharp bite. Preparing the horseradish freshly releases its potent aroma and heat, balanced by the smoothness of sour cream and the acidity of vinegar. The sauce is easy to adjust for personal taste and can be refrigerated for weeks, becoming milder and more developed over time.

Description

To make Horseradish Sauce, peel and roughly chop fresh horseradish root, then process it finely in a food processor. The grated horseradish is combined with sour cream, white vinegar, and salt to taste. Adjusting the quantities of horseradish and vinegar allows control over the sauce’s spiciness and acidity.

The sauce is creamy with a pungent, sharp flavor characteristic of fresh horseradish. It offers a cooling base from the sour cream combined with the bright acidity of vinegar. This sauce pairs well with roasted meats, sandwiches, or as a condiment where a piquant creaminess is desired.

Prepared horseradish sauce can be stored in the refrigerator for weeks. Its flavor tends to mellow and integrate over time, making it versatile for advance preparation.

Ingredients

Servings
  • 1/3 cup horseradish root instructions below, grated
  • 1 cup sour cream
  • 2 tsp white vinegar or more, to taste
  • 1/4 tsp salt or more, to taste

Instructions

  1. Peel the horseradish and cut into chunks.
  2. Place the horseradish into a food processor fitted with the metal blade (not the grating disk) and pulse/process until finely ground. Be careful, the fumes from fresh horseradish are potent, don't put your face too close to it.
  3. Measure out 1/3 cup grated horseradish and mix with the sour cream, vinegar, and salt. Blend well and taste to adjust. You can add more horseradish for more heat, more vinegar for more acidity, or more salt to taste.
  4. Pack the sauce into a jar and refrigerate until needed. The sauce will keep for several weeks and will improve over time.
