Ingredients

  • 2 boxes cornbread mix brand: Jiffy
  • 1 oz creamed corn canned
  • 1/4 cup buttermilk
  • 3 tablespoon honey
  • 2 egg
  • 2 tablespoon chives chopped

Instructions

  1. Empty cornbread mix into large bowl.
  2. Add creamed corn, buttermilk, honey and eggs. Mix well.
  3. Add snipped chives. Fold in.
  4. Spray 8"x 8" / 20x20 cm baking pan with non stick spray or butter it well. Pour in batter.
  5. Bake at 400°F / 200°C for 25-30 minutes until top is golden brown and toothpick or cake tester poked in middle of bread comes out clean.

  • Add 1/2 cup grated cheddar cheese
  • Omit chives and add other fresh herbs like parsley
  • Add finely sliced green onion tops
  • Add finely chopped jalapeño peppers
  • Try adding crispy bacon or ham
