How to Make Sausage Gravy

How to Make Sausage Gravy begins with browning ground sausage and using the rendered fat combined with butter and flour to create a roux. Whole milk is added gradually to thicken into a creamy gravy that coats the small sausage pieces. The finished gravy is seasoned and served over toast or biscuits.

Description

The recipe starts by browning ground sausage in a skillet and breaking it into small pieces. The rendered fat is measured and supplemented with butter if needed to equal two tablespoons. Flour is cooked in the fat to form a roux, developing a lightly browned and fragrant base.

Milk is added gradually in portions to the roux, allowing the gravy to thicken progressively. Once all the milk is incorporated, cooked sausage is returned to the pan and warmed through. Seasonings such as salt and pepper are adjusted to taste at the end.

This sausage gravy delivers a creamy, hearty texture with the savory flavor of sausage punctuating the sauce. It is traditionally enjoyed poured over warm toast or biscuits for breakfast or brunch.

Ingredients

Servings
  • 1 pound sausage ground
  • 2 tablespoons of rendered grease from sausage or 2 tablespoons of butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk whole

Instructions

  1. In a large skillet brown sausage over medium heat. Crumble sausage as it browns so you have many small pieces of sausage. When sausage has browned and cooked thoroughly remove sausage from pan. Measure out rendered fat in the pan.
  2. Add butter if necessary so the amount of fat is equal to two tablespoons. For example, if you render only 1 tablespoon from the sausage, add 1 tablespoon of butter. If adding butter allow butter to melt completely. Add 2 tablespoons of all-purpose flour to skillet. Stir flour and fat together, and cook over medium heat for about two minutes. The flour will begin to brown and become fragrant. Add 1/2 cup of milk to the pan, stir until the milk thickens. Add 1/2 cup to milk to the pan, and stir until the second addition thickens. Add remaining milk to pan, allow to thicken and add sausage.
  3. Cook for 1 to 2 minutes, and taste gravy and adjust seasonings with salt and pepper if necessary. Serve gravy over toast or biscuits.
