Description
The shrimp are cooked by simmering gently in water seasoned with Old Bay seasoning and fresh lemon juice for 2-3 minutes until bright pink and curled, ensuring they do not overcook and remain tender. Immediately after cooking, the shrimp are transferred to an ice water bath to stop the cooking process and maintain firmness. The cocktail sauce combines ketchup with horseradish, lemon juice, Worcestershire sauce, hot sauce, and a pinch of salt, creating a balanced sauce with a bit of heat and acidity to enhance the shrimp’s flavor. Together, the chilled shrimp and sauce offer a refreshing starter or snack.
This dish is suitable to prepare ahead; both shrimp and sauce can be made and refrigerated for up to three days. Proper timing while cooking helps avoid rubbery shrimp, and rinsing in cold water right after cooking helps maintain the shrimp’s texture.
Ingredients
For the shrimp
- 1 pound Shrimp peeled, deveined, tails-on, thawed, large raw
- 1 lemon juiced
- ¼ cup Old Bay seasoning
- water as needed, iced
For the cocktail sauce
- 1 cup ketchup
- 3 tablespoons horseradish
- 1 tablespoon lemon juice
- 2 teaspoons Worcestershire sauce
- 1 teaspoon hot sauce Cholula, Tabasco, etc.
- Pinch salt
Instructions
- Bring a large pot of water to a boil over high heat. Add Old Bay seasoning and lemon juice. Lower the heat to a low and simmer for 10 minutes.
- Add the shrimp and cook stirring occasionally for 2-3 minutes until the shrimp become bright pink and curl.
- Strain and transfer to the prepared ice water to immediately stop the cooking.
- In a small bowl, combine the ketchup, horseradish, lemon juice, worcestershire and hot sauce for the cocktail sauce until well blended.
- Serve the shrimp chilled with the cocktail sauce.
Notes
- Cooked shrimp can be stored covered in the refrigerator for up to three days.
- Both shrimp and cocktail sauce can be prepared ahead and refrigerated until serving.
- Rinsing shrimp in cold water immediately after cooking stops the cooking process and helps retain a tender texture.
- Avoid overcooking the shrimp to prevent a rubbery texture.
