Ingredients

  • 3 sweet potatoes medium sized
  • 1-2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat oven to 425°F and bring 3 cups of water to a boil.
  2. Wash and peel sweet potatoes. Make sure to remove any dark spots or strings. You can leave the skin on if you prefer.
  3. Gently place sweet potatoes in the boiling water. Boil for 8 minutes. Then, remove and drain water.
  4. Carefully slice the potatoes into ½” thick sticks/fries.
  5. Line sheet pan with parchment paper or tin foil and place fries on sheet pan.
  6. Spray or drizzle olive oil, salt and pepper on fries. Toss to coat.
  7. Bake for 25 minutes, flipping half way through. For extra crisp fries, broil at 500°F for 3-6 minutes or until sweet potato fries start to crisp.
  8. Serve hot and enjoy!

Notes

  • Boiling the potatoes makes them easier to cut, and later, easier to digest. 
  • You can keep the potato skin on if you prefer.
  • There is really no wrong way to season these! Feel free to add any other seasonings you like, such as ranch, garlic & herb, paprika, or Old Bay to name a few.
