Ingredients

  • 2 eggs
  • 2 lices of bread I used ancient grains bread, slightly toasted
  • 1 avocado halved and thinly sliced
  • 2 radishes thinly sliced
  • a handful of sprouts kale, broccoli or alfalfa sprouts
  • salt pepper
  • plastic wrap
  • hand whisk

Instructions

Method #1

  1. Crack one egg into a small bowl.
  2. Heat water in a medium bowl over medium heat. When it starts to bubble, start to whisk the water in a circular motion until it forms a little funnel. Carefully drop the egg into the center of a funnel and cook for 3 minutes.*
  3. Using a slotted spoon, remove the egg from water and transfer into a bowl with cold water.

Method #2

  1. Line a small bowl with a plastic wrap. Crack the egg into the bowl and wrap the plastic around the egg.
  2. Heat water in a medium bowl over medium heat.
  3. When it starts to boil, carefully transfer the egg into a bowl and cook for 3 minutes.*
  4. Carefully pull the plastic, remove the egg from water and transfer into a bowl with cold water.

To assemble a toast

  1. Place slices of avocado diagonally.
  2. Tuck radishes in between avocado.
  3. Top with a poached egg.
  4. Sprinkle with salt and pepper and garnish with sprouts.
  5. Serve immediately!

Notes

  • *If you want the yolk to be slightly thicker, cook it for 4 minutes instead of 3.
