The mixture is cooked over medium heat, whisked constantly to avoid lumps, and brought to a boil before simmering until it thickens.

The result is a velvety gravy that complements roasted turkey and accompaniments. This gravy can be served warm over turkey, mashed potatoes, or other side dishes typically served at a Thanksgiving or holiday meal.

It may thicken as it sits, but can be thinned again by warming and stirring in additional drippings or broth if necessary.

  • 2 Cups Drippings from a Cooked Turkey or Chicken Broth
  • 1/4 cup butter unsalted
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Strain the pan drippings through a mesh strainer to remove any solids and set aside.
  2. Melt the butter is a medium sauce pan over medium high heat.  This whisk in the flour for approximately 1 minutes.
  3. Gradually whisk in the pan drippings or broth.  Note: If you do not have a full 2 cups of drippings, you can add in broth until you have the full 2 cups.
  4. Bring the mixture to a boil.  Then reduce the heat and simmer (whisking constantly) until the mixture has thickened (approximately 5-10 minutes).
  5. Then season with the salt and pepper and serve warm.
  6. Pour over your turkey and your favorite sides and enjoy!

Notes

  • The gravy thickens further as it cools; reheating with added drippings or broth helps achieve the desired consistency
  • Ensure the pan drippings are strained to remove solids for a smooth gravy
