How to Melt Chocolate
Description
How to Melt Chocolate explains easy techniques to melt 4 ounces of any chocolate bar—bittersweet, milk, or white—using either a microwave or stovetop double boiler. The microwave method involves heating the chocolate in 30-second bursts, stirring between each interval to promote even melting. The stovetop method calls for placing a metal bowl over simmering water, stirring frequently until the chocolate is smooth. Both approaches prevent the chocolate from overheating and seizing.
Melting chocolate this way produces a smooth, workable consistency ideal for dipping, drizzling, or incorporating into desserts. Taking care to stir regularly ensures the chocolate melts evenly and maintains its glossy texture. Using a double boiler avoids direct heat that can easily burn chocolate.
Leftover melted chocolate should be cooled and stored in the refrigerator for up to three months to preserve quality. It's best to use melted chocolate immediately when possible to maintain temper and texture.
Ingredients
- 4 ounces bittersweet chocolate Dark, Milk, White, bar
Instructions
Microwave
- Place chocolate in a microwave-safe bowl. Place the bowl in the microwave at 30 second intervals.
- Stir chocolate in between each 30 seconds so all of the chips are just about melted.
- Continue to stir until the last remaining pieces have melted.
Stovetop
- Place a pot of water on the stove and bring to a boil, reduce to a low simmer.
- Place chocolate in a metal bowl that will fit over the top of the pot of water snugly.
- Place the bowl with chocolate on top of the simmering water, stirring very often until melted.
Notes
- Use 30-second microwave intervals with stirring to avoid overheating chocolate in the microwave.
- When melting chocolate on the stovetop, ensure the bowl fits snugly over simmering water and avoid steam or water contact with chocolate.
- Use leftover melted chocolate promptly or cool it on parchment to store in an airtight bag in the fridge for up to 3 months.
