How To Preserve Cherries - Low Sugar

This low sugar cherry preserving method uses whole, pitted cherries packed in jars with a small amount of granulated sugar and water. The jars are then canned in a boiling water bath to seal and preserve the fruit. This approach keeps cherries preserved with minimal added sugar, maintaining their natural flavor and allowing long storage in a cool, dark place.

Description

The preservation process starts by cleaning canning jars thoroughly and pitting cherries while keeping them whole. The cherries are packed into jars with about an inch of headspace, then 1 to 2 tablespoons of granulated sugar are added per jar depending on taste. Water is poured over the cherries to cover them completely before sealing the jars.

The filled jars are placed in a wide pot lined with a clean towel to prevent direct contact, covered with water, and boiled for about 15 minutes to process and seal them. Once removed carefully and cooled on kitchen towels, the jars can be stored in a cool, dark place such as a cellar.

This method allows cherries to be preserved for extended periods; jars stored for two years were still in good condition. A cherry pitter is helpful to ease preparation, and the number of jars made depends on cherry quantity. This recipe focuses on minimal sugar addition while still ensuring safe preservation.

  • 1 -2 tablespoons granulated sugar per jar

Instructions

  1. Clean the jars thoroughly and as instructed above.
  2. Pit the cherries but leave them whole (Note 2).
  3. Place the cherries in the jars leaving about 2.5 cm/ 1 inch of space at the top. Add 1 or 2 tablespoons sugar to each jar (to taste).
  4. Pour water in each jar to completely cover the cherries. Seal the jars.
  5. Can in a canner or water bath (if you don't have a canner). Take a very wide pot. Place a clean, folded kitchen towel inside it. Put as many jars in the pot as they fit, taking care that they don't touch each other. Cover with water and can. Bring the water to a boil and boil the jars for about 15 minutes.
  6. Cool jars: Take them out immediately, place them on kitchen towels, and leave them to cool.
  7. Store cherries in a cool, dark place (I keep them in the cellar). They will keep for a rather long time; the cherries I preserved 2 years ago were still perfect this summer.
