How to remove the skins from chickpeas

This method for removing chickpea skins involves rinsing canned chickpeas, cooking them briefly with baking soda in the microwave, then rubbing them in cold water to dislodge and separate the skins. The technique yields peeled chickpeas useful for recipes requiring smooth texture or reduced bitterness.

Description

The process begins by draining and rinsing two regular-sized cans of chickpeas to remove canned liquid and debris. Baking soda is added to the chickpeas in a microwave-safe bowl to assist in loosening the skins during cooking. Cooking for one minute on high in the microwave heats and softens the chickpeas and their skins.

After heating, the chickpeas are placed in cold water and rubbed between the hands. This agitation causes the thin chickpea skins to float to the surface, where they can be easily skimmed away. Removing the skins results in chickpeas with a smoother, less gritty texture and can improve the mouthfeel of dishes like hummus or soups.
