Ingredients

Servings
  • one pound butternut squash medium
  • 6 tablespoons butter melted, salted
  • 1.5 teaspoons salt fine sea salt

Instructions

  1. Preheat the oven to 400°F.
  2. Cut off the ends off the butternut squash.
  3. Peel the squash, cut in half lengthwise and then remove the seeds.
  4. Cut the squash into 1 ½ inch cubes (uniform is best) and place them on a baking sheet.
  5. Add the melted butter.
  6. Toss and spread out in a single layer on the baking sheet.
  7. Turn the squash while roasting a few times to ensure even browning.
  8. Roast for 45 minutes to 55 minutes, until the squash is tender.

Notes

  • You can add your favorite seasonings if desired
