How to Roast Garlic
Description
How to Roast Garlic explains the process of transforming a head of garlic from sharp and pungent to soft and sweet through slow oven roasting. After trimming the top to expose the cloves, the garlic head is coated with olive oil and seasoned with salt and pepper before being wrapped in foil and placed in a moderate oven. Roasting times vary depending on size and desired caramelization, typically between 35 and 50 minutes.
Roasting softens the cloves so they can be easily squeezed out of their papery skins, yielding a spreadable paste with rich flavor. This method preserves the garlic's natural skin on individual cloves, making removal straightforward. The guide also notes an alternate method using peeled cloves to speed preparation.
Roasted garlic has a versatile role in recipes, suitable for spreading on bread, mixing into mashed potatoes, or enhancing soups and sauces. It retains creaminess when warm and gains sweetness and reduced sharpness.
The instructions emphasize monitoring the garlic near the minimum suggested time and stirring periodically when roasting peeled cloves to prevent over-browning. Cooling and storing in oil extends its usefulness.
Ingredients
- 1 head garlic
- drizzle olive oil
- sprinkle kosher salt
- sprinkle black pepper
Instructions
Prepare
- Preheat the oven to 400°F and place the oven rack in the middle position.
- Peel the loose paper off the garlic, leaving the tight paper skins intact. Keep the whole head together, don't separate any of the cloves.
- Using a sharp knife, slice off the top 1/2" of the whole head of garlic, or enough to expose the tops of the cloves.
- Place garlic on a sheet of foil and drizzle the exposed cloves liberally with olive oil. Season with a sprinkle of salt, pepper.
Roast
- Wrap the foil up around the garlic loosely, then place the garlic in a baking dish and roast in the oven for 35 - 50minutes.
Remove the cloves
- To remove garlic from the paper cloves, just squeeze at the root end of the head, and the soft garlic should slide right out.
Serve or store
- Serve warm, or let cool and add to an airtight container. Cover with some olive oil if desired.
Notes
- Roast whole garlic heads for 35-50 minutes until cloves are soft and caramelized; start checking at 35 minutes.
- Alternatively, roast peeled garlic cloves in a baking dish with olive oil; stir regularly to avoid over-browning.
- Store roasted garlic in an airtight container with olive oil for added shelf life.
- Roasted garlic can be used spread on bread, mixed into dishes, or stored for future use.
