How to Roast Peanuts for Peanut Butter

This recipe details roasting shelled peanuts in the oven before processing them into peanut butter. The peanuts are roasted to a golden color at 350°F, then cooled before blending for either chunky or creamy peanut butter, with salt added for flavor. Roasting enhances the nuts’ aroma and texture essential for homemade peanut butter.

Description

How to Roast Peanuts for Peanut Butter begins with preheating the oven to 350°F and placing shelled peanuts on a parchment-lined baking sheet in a single layer. They roast for 10 to 15 minutes, stirred periodically to ensure even coloring without burning. The peanuts are removed and cooled thoroughly to stop cooking and to allow optimal grinding texture.

The recipe then explains processing the cooled roasted peanuts in a food processor. To make chunky peanut butter, some peanuts are processed briefly then removed, with chopped peanuts folded back into creamier processed nuts. For creamy peanut butter, all peanuts are processed until smooth with salt added to taste. The process varies by food processor model.

Roasting brings out natural nut flavors and changes the texture, which is crucial for achieving good peanut butter consistency. Cooling before processing avoids overheating the motor and preserves flavor. The recipe notes that a Thermomix processes peanuts in 4-5 minutes and advises monitoring heat buildup during processing.

Instructions

  2. Place the peanuts on the tray in a single layer. If not all of them fit on the tray, roast them in two batches.1 lb shelled peanuts / 450 g
  3. Roast for 10 to 15 minutes until golden, stirring at least twice in between. Keep a close eye on them; they should not get too dark but should be slightly underdone as they continue to cook after removing them from the oven.
  4. Cool: When golden, immediately remove from the baking sheet. Let them cool in a large bowl or on another cool tray or baking dish. Let them get completely cool before using them to make peanut butter.

How to make peanut butter

  1. Chunky peanut butter: Roughly process a good handful of roasted peanuts, then remove them from the food processor. Add the chopped peanuts to the creamy peanut butter.
  2. Creamy peanut butter: Place as many peanuts in the food processor as it can handle. Add a good pinch of salt. Process until smooth and creamy, scraping down the walls of the machine a few times in between (Notes 1,2).fine sea salt
  3. If you want to make chunky peanut butter, now is the time to stir the chopped peanuts into the butter.
  4. Transfer the peanut butter into clean jars and refrigerate or freeze once it is cooled down.
