How To Shuck Oysters
Description
Begin by steaming oysters in a pot with a small amount of boiling water and a steaming basket for around 4 minutes. This short cooking loosens the oyster muscle that keeps the shell closed, making shucking easier. Once steamed, oysters are removed and served for shucking at the table.
A proper oyster shucking knife and a clean tea towel are essential tools. Holding the oyster in the towel to protect your hand, the knife tip is inserted into the hinge of the oyster shell. Applying firm pressure and twisting the knife opens the shell. Then running the knife under and around the oyster releases it from the shell’s interior, allowing it to be served raw or with condiments.
This process emphasizes safety and proper technique, preventing injury and damage to the oyster or your knife, and producing neatly opened oysters ideal for eating fresh.
Ingredients
- 40 oyster raw
- baking soda for cleaning
- Condiments your choice
Instructions
- Place 1 inch of water in a large stock pot and place a steaming basket into the pot. Cover and place over high heat.
- When the water comes to a boil, fill the pot with oysters and cover. Set the timer for 4 minutes. Once the timer goes off, immediately take the lid off and dump the oysters into a serving bowl.
- Give each person a clean tea towel and shucking knife. (Do not try to use regular knives. You could potentially hurt yourself and/or ruin your knives.)
- Place the oyster in one hand on the folded towel. Look for the natural hinge in the oyster. Insert the tip of the oyster shucking knife into the hinge and firmly dig and twist.
- Once the oyster is open, wipe the edge of the knife on the towel. Then run the edge of the knife gently over and under the oyster to release it from the shell.
