How to Slow Cook a Precooked Ham in the Oven

This slow-cooked precooked ham recipe uses low-temperature baking to warm and moisten the meat before finishing with a brown sugar glaze at high heat. The glaze combines brown sugar, maple syrup, mustard, and garlic to create a sticky, flavorful coating. The slow cooking retains moisture and the final glaze adds sweetness and a sticky texture to the ham slices.

Description

The method begins by slowly baking a bone-in spiral precooked ham at 275°F covered in foil to prevent drying, allowing heat to penetrate evenly. Periodic basting with the ham's own juices keeps it moist, and separating slices during basting ensures thorough glaze absorption later. A glaze made from brown sugar, maple syrup or honey, mustard, and minced garlic is simmered briefly and then brushed generously over the ham after the slow bake.

Following glazing, the ham cooks at 425°F briefly to caramelize the glaze, creating a sticky, sweet crust that contrasts with the tender, juicy meat inside. Resting under foil after baking redistributes juices for optimal tenderness. This approach balances internal moisture retention with an appetizing sweet finish on the ham slices.

The recipe suits holiday meals or occasions needing a large, flavorful ham served carved into individual slices. The technique highlights maintaining moisture for a precooked ham while adding a homemade glaze for extra flavor and texture.

Ingredients

Servings
  • 10 lb ham bone-in spiral

Brown Sugar Glaze

  • 1/2 cup brown sugar packed
  • 1/4 cup maple syrup or honey, real
  • 2 tbsp yellow mustard or dijon or whole grain
  • 2 cloves garlic minced

Instructions

  1. Preheat oven to 275° F. Unwrap ham and place face down in roasting or baking dish. Cover well with foil.
  2. Bake 12-15 minutes per pound (or cook according to specific package directions). Baste 1-2 times through cooking with ham juices that have accumulated in the bottom of the pan. Be sure to separate the slices as you baste. This ensures ham will stay moist.
  3. Make the glaze while ham is baking. Increase Oven temperature to 425° F.

For the Brown Sugar Glaze

  1. In a small saucepan, measure out all the ingredients and stir over medium heat.
  2. Simmer glaze until sugar melts and becomes syrupy about 1-2 minutes.
  3. Remove from heat and glaze hame generously, being sure to separate the slices of spiral ham to get the glaze into all of the nooks and crannies
  4. Bake glazed ham at 425° F for 10 minutes or until sticky and set. Remove ham from oven and cover with foil to rest 10-15 minutes. Carve and serve.
