Huevos Rancheros Recipe

Huevos Rancheros combines crispy fried corn tortillas topped with creamy refried beans, rich enchilada sauce, and fried eggs. The layers create a satisfying mix of textures with a savory and slightly spicy flavor. This Mexican-inspired breakfast or brunch dish is versatile and can be customized with toppings like avocado, queso fresco, and crema for extra richness.

Description

Huevos Rancheros starts with frying yellow corn tortillas until crisp, providing a sturdy base with crunchy edges. The refried beans are cooked with shortening and milk until smooth and creamy, then melted with cheese for added depth. Warm enchilada sauce adds color and spice, spooned generously over the beans and tortillas. Fried eggs, preferably sunny side up, finish the dish with a tender yolk that adds richness when broken across the layers. Toppings such as avocado, cilantro, Mexican crema, and queso fresco introduce fresh, cool, and tangy contrasts, enhancing the complex balance of flavors.

The frying technique for the tortillas is key, ensuring they hold up under toppings without becoming soggy. Serving immediately keeps the textures crisp and fresh. This dish functions well as a hearty breakfast or brunch and pairs nicely with a fresh salsa or fruit on the side.

Prepare components like the tortillas and refried beans a day in advance to speed up assembly. Store all elements separately to maintain freshness and reheat gently before serving. Sunny-side-up eggs are recommended to preserve the bright yolk that enriches the overall taste and texture.

Ingredients

Servings

Chips

  • ½ cup vegetable oil
  • 4 yellow corn tortillas
  • 2 cups enchilada sauce homemade or store-bought, red

Refried Beans

  • 30 ounces refried beans
  • ¼ cup shortening Crisco brand
  • cup milk
  • 1-2 cups cheese

Toppings

  • avocado
  • Mexican crema
  • queso fresco
  • cilantro
  • 4 egg fried

Instructions

  1. Heat ½ cup oil in a large skillet over medium-high heat until shimmering. Add one tortilla at a time, flipping once, until lightly brown and crisp.
  2. Drain the freshly fried tortilla on a paper towel-lined baking sheet. Repeat this process until all tortillas are fried, adding more oil if needed.
  3. In another skillet, heat the enchilada sauce.
  4. While enchilada sauce is heating up, make beans by combining refried beans, shortening, and milk in a pot over medium heat. Stir vigorously with a fork or wire whisk until silky smooth. Add cheese and let melt before serving.
  5. Using the same frying pan where you fried tortillas, pour the oil in a bowl to cool and fry the eggs to your preference (runny, sunny side up, well done).
  6. Transfer two tortillas side by side onto a plate. Add some refried beans and spread it over tortillas.
  7. Add enchilada sauce (a large spoonful) and spread over the beans.
  8. Place your fried eggs on tortillas and finish with more sauce on top, avocado, crema, cilantro, and queso fresco.

Notes

  • Fry tortillas up to two days ahead and store them covered to retain crispness.
  • Make refried beans in advance and reheat gently before serving for convenience.
  • Store leftover ingredients separately, and assembled leftovers should be kept airtight and consumed within 24 hours.
  • Reheat assembled Huevos Rancheros in the microwave or oven to maintain texture.
  • For authentic flavor, stick to the main ingredients and sunny-side-up eggs with intact yolks cooked about 2-3 minutes.
