Description
This recipe combines brown sugar, ketchup, soy sauce, chicken broth, ginger, and garlic to create a marinade that infuses chicken thighs with a sweet and slightly tangy flavor. After reserving some marinade for basting, the chicken is marinated overnight to absorb the flavors deeply.
The thighs are grilled over medium heat, basted frequently with the reserved marinade to build layers of caramelized glaze, resulting in a juicy chicken with a well-developed sweet-savory crust.

The chicken can be prepared ahead by freezing in the marinade for up to six months in a freezer-safe bag, thawed overnight in the refrigerator to continue marinating. Leftovers store well refrigerated for 3-4 days or frozen up to 4 months.
Ingredients
- 1 cup brown sugar packed
- ¾ cup ketchup
- ¾ cup soy sauce reduced-sodium
- ⅓ cup chicken broth
- 2 teaspoons ginger
- 2 teaspoons garlic minced
- 12 chicken thigh boneless, skinless
Instructions
- Mix brown sugar, ketchup, soy sauce, broth, ginger, and garlic in a small bowl. Take out 1 cup and reserve for basting (and refrigerate).
- Place the rest of the marinade into a large Ziploc bag with the thighs. Refrigerate overnight.
- Discard marinade from chicken and grill thighs until no longer pink (about 8 minutes per side), basting with the extra marinade as you grill. Serve warm. ENJOY!
