Hummus

Easy and quick Hummus takes less than 10 minutes to make. It's creamy, savory and has a slightly tangy flavor, which makes it a delicious and healthy appetizer served perfectly with pita bread, chips, and vegetables.

Ingredients

  • 1 1/2 cups chickpeas fully cooked or 1 can
  • 1 clove garlic
  • 1/4 cup tahini
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin ground
  • 1 teaspoon paprika
  • 3 tablespoons lemon juice fresh
  • 2 ice small cubes
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Add the chickpeas, garlic, tahini, salt, ground cumin, half of the paprika, and fresh lemon juice to a blender (or food processor). Blend for 2 minutes, stopping to scrape down the sides of the blender as needed. Add the ice cubes and blend for an additional 1 minute, or until smooth.
  2. Spoon the hummus into a serving dish. Sprinkle the remaining paprika and freshly chopped green onion (or parsley) on top. Drizzle with olive oil and serve immediately.

Notes

  • If using dried chickpeas, cook them until they are very tender.
  • Adding ice cubes during blending helps to cool down the mixture and results in a smoother texture. 
  • If the hummus is too thick, you can adjust the consistency by adding a bit of water or extra lemon juice until it reaches your desired thickness.
