Hummus

This classic hummus is made by simmering chickpeas with baking soda then blending them with tahini, lemon juice, olive oil, garlic, cumin, salt, and pepper to a smooth, creamy consistency. The ice-cold water added during blending adjusts thickness for the ideal texture. Finished with olive oil and a sprinkling of paprika, this hummus offers a balanced, savory flavor and can be served as a dip or spread.

Description

The hummus recipe starts with chickpeas cooked with baking soda until soft to achieve a creamy base. After draining and rinsing, the chickpeas are processed with tahini, lemon juice, olive oil, minced garlic, ground cumin, salt, and black pepper. The mixture is blended thoroughly, adding ice-cold water to reach a smooth, spreadable texture. Adjustments can be made by adding more lemon juice, salt, or cumin to taste.

This preparation technique ensures a creamy, rich dip with a subtle nuttiness from tahini and bright citrus notes from lemon. The paprika dusted on top adds a mild smoky color and flavor. It pairs well with fresh vegetables, pita bread, or as a component in various Mediterranean dishes.

The recipe notes suggest adding extra cold water for a smoother consistency if needed. Drizzling good quality olive oil and adding paprika enhances the presentation and flavor at serving.

Ingredients

Servings
  • 15 ounces chickpeas drained (or 1 ½ cups cooked chickpeas)
  • ½ teaspoon baking soda for canned chickpeas only
  • ¼ cup tahini
  • 2-3 tablespoons lemon juice adjust to your tastes
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic minced
  • ¾ teaspoon cumin ground
  • ¾ teaspoon salt to taste
  • 1 pinch black pepper to taste
  • 2 tablespoons water ice cold
  • 1 pinch paprika Pinch of paprika or sumac for serving

Instructions

  1. Add chickpeas into a small pot. Cover with water and add baking soda. Bring to a boil over high heat. Reduce heat to medium-high and let boil until soft, about 20-25 minutes.
  2. Drain chickpeas in a fine mesh strainer under cool running water until water runs clear, about 20 seconds.
  3. Transfer chickpeas to a food processor with tahini, lemon juice, olive oil, garlic, cumin, salt and pepper. Process until smooth, scraping down the sides with a spatula when the hummus gets stuck to the walls of the bowl. Process once more. With the food processor running, drizzle in 2 tablespoons of the ice cold water. Process until smooth and creamy. (If your hummus is too thick if using a thick tahini, blend 1-2 extra tablespoons of cold water into your hummus until reaching your desired consistency.)
  4. Taste test and adjust flavours if necessary: extra pinch of salt or cumin, or a little extra lemon juice.
  5. To serve, drizzle with olive oil and sprinkle with a light dusting of paprika.

Notes

  • Add 1-2 extra tablespoons of cold water during blending to achieve a creamier hummus if needed.
  • Sprinkle paprika when serving to enhance flavor and presentation.
