We love these hummus quesadillas! Crispy, golden tortilla shells filled with smooth and creamy hummus. Top with a quick avocado tomato salad and your family will go crazy for them!

Ingredients
- 4 tortillas flour, corn, whatever you choose!
- ½ cup hummus or more if desired
- olive oil spray for toasting or butter for toasting
- 1 avocado chopped
- 1 cherry tomato chopped, handful
- 1 olive oil drizzle of
- 1 lime juiced
- salt kosher salt
- black pepper kosher salt
- onion for serving, pickled
Instructions
- Spread ¼ cup of hummus on 2 tortillas. Place another tortilla on top.
- Heat butter or oil (or use olive oil spray) in a nonstick skillet over medium low heat. Place a quesadilla in the skillet and cook on each side for about 5 minutes, until golden and toasty. Repeat with the remaining quesadilla.
- In a bowl, toss the avocado and tomatoes with the olive oil and lime juice. Season all over with salt and pepper.
- Serve the quesadillas with the avocado salad on top. Top with pickled onions.
