Hush Puppies
Description
These Hush Puppies start with a batter of cornmeal, flour, baking powder, finely chopped onion, salt, and a touch of ground red pepper for mild heat. Milk and an egg bind the ingredients. The batter should resemble thick Belgian waffle batter to hold shape well during frying and avoid excessive oil absorption.
The cooking involves frying the batter in hot oil at 350°F until golden brown, resulting in a crisp outside with a soft, doughy center. Careful frying in small batches helps maintain oil temperature and ensures even cooking without greasiness.
Hush Puppies pair well with seafood or barbecue dishes and can be served as a hearty snack. They are traditional Southern fried bread that adds texture and flavor contrast to meals.
Adjusting milk slightly may be needed depending on cornmeal brand due to varying absorption. Monitoring the batter thickness and frying temperature helps achieve optimal results.
Ingredients
- vegetable oil for frying
- 2 cups cornmeal
- 1 tablespoon all-purpose flour
- 2 teaspoons baking powder
- 9 tablespoons onion finely chopped
- 1 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1 cup milk
- 1 Large egg
Instructions
- Pour vegetable oil into a deep fryer or heavy-bottomed pot until the oil is 3 to 4 inches deep.
- Heat the oil to 350°F.
- In a medium bowl, stir together the cornmeal, flour, baking powder, onion, salt, and ground red pepper.
- Add the milk, the egg, and stir to combine.
- Drop heaping spoonfuls of the batter into the hot oil. Fry only a few at a time for best results. If you add too many at once the oil temperature may drop and they make not cook well.
- Fry the hush puppies for 1 to 2 minutes, until they have browned.
- Remove them from the oil, and drain on a wire rack.
Notes
- Adjust batter thickness by adding or reducing milk to achieve a consistency similar to thick Belgian waffle batter for best frying results.
- Fry in small batches to keep oil temperature steady and ensure even golden crust without greasiness.
- Different cornmeal brands absorb liquid differently; tweak milk amount accordingly to suit desired batter texture.
- Batter consistency is crucial to avoid greasy or dense hush puppies—aim for a scoopable batter that holds its shape.
