Hush Puppies

Hush puppies are small deep-fried balls made from a cornmeal-based batter mixed with flour, seasonings like garlic powder and paprika, sugar, and chopped green onions. The batter is formed into tablespoon-sized balls and fried in hot avocado oil until golden and crispy on the outside while remaining tender inside. These savory bites feature a slightly sweet, spiced corn flavor with a satisfying crunch from frying. They are versatile and often served alongside burgers or as a snack, offering a pleasant contrast to main dishes.

Description

Hush Puppies combine cornmeal and all-purpose flour with leavening agents like baking soda and powder, enhancing their lightness and texture. The addition of garlic powder and paprika provides subtle savory and smoky notes, while cane or coconut sugar balances the flavors with a touch of sweetness. Green onions add fresh, mild sharpness to the batter. Making the batter is straightforward; dry ingredients are mixed, then combined with buttermilk and eggs. Formed into small balls, they are deep-fried in avocado oil at 350°F, ensuring even cooking and a crisp exterior. Frying in batches with enough space allows the puppies to turn and brown evenly.

These hush puppies work well as a side dish with burgers or fried foods and can also be enjoyed for breakfast with jam. Their rich, crunchy exteriors contrast nicely with a soft interior, providing satisfying texture. Leftovers reheat well and their sweet-savory profile complements a variety of meals.

Ingredients

Servings
  • 1 1/2 cup cornmeal fine grind or medium grind
  • 1/2 cup all-purpose flour or gluten-free all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 1/2 tsp salt sea salt
  • 2-3 Tbsp cane sugar or coconut sugar
  • 3 talks green onion finely chopped
  • 2/3 cup buttermilk or cream
  • 2 large egg lightly beaten
  • 3 cups avocado oil for frying

Instructions

  1. In a large mixing bowl, add all dry ingredients and whisk to combine.
  2. Add the onion, buttermilk and eggs to the dry mixture and mix until combined.
  3. In a large thick-bottomed pot or saucepan, heat about 3 – 4 cups of high temperature cooking oil to 350 degrees.
  4. Using your hands, form balls (about a tablespoon worth of dough works great) and carefully drop them in the hot oil with a heat resistant spoon. The oil should bubble around the hushpuppies and should naturally turn them in circles, evenly cooking them and creating a nice crispy outside. This only takes a minute or two or until golden brown/desired level of crisp. Fry 3 to 6 at a time so that the puppies have plenty of space.

Notes

  • Serve hush puppies alongside burgers or enjoy leftovers with jam at breakfast.
  • Form dough balls of about one tablespoon each for even frying and uniform size.
  • Maintain oil temperature around 350°F and avoid crowding the pan to achieve crispy, evenly cooked hush puppies.
