Hushpuppies

Hushpuppies are delicious little fried balls made from yellow cornmeal and often served as an accompaniment to seafood.

Ingredients

  • cup cornmeal yellow
  • cup all-purpose flour
  • teaspoon baking powder
  • ½ teaspoon salt
  • 1 egg lightly beaten, large
  • ¾ cup milk whole
  • 1 onion finely chopped, small
  • vegetable oil for frying

Instructions

  1. In a large bowl, mix the cornmeal, flour, baking powder and salt.
  2. In a separate large bowl, whisk the egg, milk and onion and add this mixture to the dry ingredients. Mix well.
  3. In a large cast iron or electric skillet, heat a large volume of oil to 350 F (175 C).
  4. Place the dough one tablespoonful at a time in the hot oil.
  5. Fry until golden brown.
  6. Drain on paper towels.
  7. Serve hot.
