Iced Coconut Coffee Soda
Description
The coconut syrup is made by simmering unsweetened flaked coconut with sugar and water until the sugar dissolves and flavors infuse. After cooling and straining, coconut extract is stirred in to intensify the coconut essence. This syrup can be refrigerated for about a week.
To prepare the drink, crushed ice and coconut syrup are combined in a glass before pouring over cold brew coffee. Adding coconut milk or cream is optional, offering a creamy texture. The mixture is topped with seltzer water, which adds sparkling bubbles and lightens the drink's richness.
This beverage balances sweetness, coffee depth, and tropical notes, making it a unique choice for warm days or as an interesting coffee variation.
Ingredients
coconut syrup
- 1/2 cup flaked unsweetened coconut
- 1/2 cup sugar
- 1/2 cup water
- 1/2 teaspoon coconut extract
coffee soda
- 3 tablespoons coconut syrup
- cold brew coffee 8 ounces
- coconut milk optional, or cream
- 3 to 4 ounces seltzer water coconut flavored works too!
Instructions

- Combine the coconut, sugar and water in a saucepan over medium heat. Whisk until the sugar dissolves and the mixture starts to simmer. Remove from the heat and let cool completely. Strain the syrup through a fine mesh strainer into a jar and stir in the extract. Store in the fridge for a week or so!
coffee soda
- Fill a glass with crushed ice and add the coconut syrup. Pour in the cold brew and stir. If it's your preference, stir in the coconut milk or cream. top with the soda and serve!
