Ingredients
- 1 cup Pineapple ginger syrup 500 mL
- 2 cups guava juice 1 L
- ½ cup passion fruit juice 250 mL
- ⅛ cup tart cherry juice 30 mL, optional
- 1 can 13.5 oz coconut milk
- ice for serving
Pineapple Ginger Syrup
- 1/2 cup pineapple juice 250 mL
- 1/2 cup water 250 mL, cool
- 1 piece ginger 3 inches, fresh
- 1/2 cup granulated sugar 100 g
Instructions
- In a small saucepan, mix all the ingredients for the pineapple ginger syrup together over medium heat. Let simmer until all the sugar dissolves. Pour into a heat-safe container with a lid and let cool completely in the refrigerator.
- Once cool add pineapple ginger syrup, guava juice, passion fruit juice, tart cherry juice, and coconut milk to a blender and pulse until well blended or simply stir the ingredients together in a large pitcher.
- Pour over ice in serving glasses and enjoy.
Notes
- Add about 1/2 cup of coconut rum or vodka to the pitcher for an adult version.
- Stir or blend the drink before serving to reincorporate separated coconut cream and water.
- Prepare pineapple ginger syrup in advance and chill thoroughly for best flavor integration.
