Description
This latte starts with preparing a lavender vanilla syrup by simmering sugar, water, dried and fresh lavender, and a split vanilla bean until the sugar dissolves and flavors infuse. After cooling, the syrup is strained to remove solids and enhanced with vanilla extract, yielding a sweet, floral concentrate.
The latte is assembled by filling a glass with ice, stirring together milk and the syrup, then pouring in freshly brewed espresso shots. Stirred gently to combine, the beverage balances the creamy milk and aromatic syrup with the boldness of espresso.
Garnishing with a sprig of fresh lavender adds visual appeal and enhances the floral scent, making this beverage suitable for a refreshing, slightly sweetened coffee experience during warmer weather or as a special treat.
Ingredients
lavender vanilla syrup
- 1/2 cup sugar
- 1/2 cup water
- 2 teaspoons lavender dried, culinary
- 2 lavender fresh sprigs
- 1 vanilla bean split in half
- ½ teaspoon vanilla extract

- 6 ounces milk cow’s, almond, coconut, etc
- 2 espresso shots
- 2 tablespoons lavender vanilla syrup
- lavender fresh sprig for garnish
Instructions
- Place the sugar, water, lavender and vanilla bean in a saucepan over medium-low heat. Whisk until the sugar dissolves, bringing the mixture to a simmer. Cook for 1 minute. Turn off the heat and set the saucepan aside. Let it cool completely. Strain the mixture through a fine mesh sieve to remove the lavender. Stir in the vanilla extract. Store in a sealed container in the fridge! The syrup will make about ½ cup.
- Fill a large glass with ice. Add the milk and syrup and stir together well. Pour in the espresso shots and stir. Garnish with a sprig of fresh lavender. Serve immediately!
