Iced Pineapple Matcha Drink Recipe (with VIDEO)
Description
The Iced Pineapple Matcha Drink combines matcha green tea powder and ground ginger first dissolved in a small quantity of pineapple juice to ensure smoothness without clumps. Coconut milk, mainly non-sweetened and full-fat, provides a rich, creamy base that mellows the vegetal matcha flavor. Additional pineapple juice enhances the tropical fruitiness, while simple syrup or honey adjusts the sweetness level to taste, emphasizing the drink's balance between earthy, sweet, and tart.
Preparation involves mixing the matcha mixture with the coconut milk and remaining pineapple juice in a pitcher, then adding sweetener gradually to reach the desired taste. Served over ice, the drink is cool and creamy with a mild zing from the ginger powder. Whisking properly ensures an even texture with no powder residue.
The drink’s green color can be varied by adjusting matcha powder quantity. For a cleaner texture, the mixture can be strained before adding syrup. This beverage serves well as a fruit-forward alternative to traditional iced teas, suitable for casual sipping on warm days.
To dissolve the powders properly, pre-mixing them with pineapple juice is recommended to avoid lumps. Sweetness can be customized gradually, starting with a modest amount of syrup or honey. Using non-sweetened coconut milk helps control sugar levels.
Ingredients
- 1 cup pineapple juice divided
- 1 1/2 cups coconut milk I used non-sweetened, full-fat. If you use sweetened, you’ll need to reduce the amount of sugar
- 1 1/2 teaspoons matcha green tea powder
- 1/4 teaspoon ground ginger
- 2-3 tablespoons simple syrup (or honey, you can adjust the sweetness by using more or less)
- ice cubes
Instructions
- In a small bowl, whisk together matcha green tea powder, ginger powder, and 1/3 cup of pineapple juice until dissolved. (Make sure you mix it very well and there’s no lumps.)
- In a large pitcher, add coconut milk, the rest of the pineapple juice, and the matcha green tea mixture. Mix well.
- Add syrup to your desired sweetness. (It’s important to start with a small amount, and gradually add more.)
- Fill a glass halfway with ice and pour the mixture into the glass. Serve and enjoy immediately.
Notes
- Mix matcha powder and ginger with a small portion of pineapple juice first to fully dissolve and avoid clumps.
- Adjust matcha powder amount to control the drink's green color intensity.
- If you prefer a smoother texture without tiny particles, strain the mixture through cheesecloth or a coffee filter before adding syrup.
- Customize sweetness by starting with less syrup or honey and adding more gradually to taste; stevia can be used as a sugar-free alternative.
