Description

The omelette starts by cooking bacon to crispiness and chopping it. American cheese is slowly melted with a bit of milk to create a smooth cheese sauce. Eggs are whisked together with some of the bacon and pancake batter, which adds lightness and moisture. The mixture is cooked in a rectangular shape until mostly set, then half of the cheese sauce is poured over before rolling it up.

The rolled omelette is plated and topped with shredded Monterey Jack cheese and remaining bacon pieces for extra flavor and texture. The remaining cheese sauce can be served on the side for dipping or additional richness. This dish offers a combination of creamy, savory, and smoky elements, with a unique integration of pancake batter for added softness.

For a lower-carb option, the pancake batter can be omitted to reduce total carbohydrates, while still keeping much of the flavor and texture.

Ingredients

  • 4 ounces American cheese
  • 2 tablespoons milk divided use
  • 2 tablespoons pancake batter prepared (note, you will need to prepare a small amount of pancake batter, you may omit this if you desire)
  • 4 egg
  • 6 lices Bacon cut into small pieces cooked, divided use
  • ¼ cup Monterey jack cheese shredded

Instructions

  1. Cook the bacon until crispy. Chop the cooked bacon into pieces.
  2. Preheat a griddle or skillet to 350 degrees.
  3. In a small saucepan over medium heat, melt the American cheese with 1 tablespoon of milk. Stir constantly, the cheese will melt and form a cheese sauce. 
  4. When the cheese sauce forms, reduce the heat as low as you can.
  5. In a medium bowl, combine eggs, bacon pieces from 4 slices of bacon, pancake batter, and the remaining 1 tablespoon of milk. Whisk vigorously until well blended.
  6. Spray the griddle with nonstick spray.
  7. Pour the omelet on the griddle in a rectangular shape. As the eggs cook they will form up.
  8. When the eggs are almost done pour over half of the cheese sauce onto the eggs.
  9. Roll the omelet into a roll and place it on a plate.
  10. Top the omelet with shredded cheese and remaining bacon pieces.
  11. You can serve the omelet with the remaining cheese sauce on the side.

  • Omitting pancake batter reduces carbs, making it more keto-friendly.
  • Press bacon thoroughly before chopping to ensure crisp texture.
  • Cheese sauce should be melted slowly over low heat to avoid separation.
