Impossible Meatloaf
Description
Impossible Meatloaf is a plant-based version of classic meatloaf using Impossible beef as the main protein substitute. Rolled oats bind the mixture while diced onion, garlic, vegetarian Worcestershire sauce, ketchup, and black pepper provide flavor. The mixture is blended into a loaf shape, baked until set, then brushed with more ketchup or barbecue sauce for a tender, flavorful glaze. Baking in a loaf shape gives a familiar meatloaf texture and appearance while staying completely vegan.
The texture balances the moistness of Impossible beef with the binding effect of oats, and the onion and seasonings add savoriness. The ketchup glaze adds a tangy sweetness and moisture. Baking time is relatively short, around 30 minutes total, with a glaze applied midway for a glossy finish.
This meatloaf can be served sliced with side dishes like mashed potatoes or vegetables. It can be portioned into mini meatloaves for individual servings by dividing the mixture.
The recipe scales well; increase baking time if doubled or tripled, and adjust sauce quantities accordingly. Use either 12 or 16-ounce Impossible beef packages, adjusting sauce slightly based on volume used.
Ingredients
- 12 to 16 ounces Impossible beef see Note 1, or Beyond Beef
- ½ cup rolled oats or quick oats
- ⅓ cup yellow onion finely diced or grated
- ¼ cup ketchup + more for topping, or barbeque sauce
- 2 tsp vegetarian Worcestershire sauce (*can sub with Maggi sauce or soy sauce)
- 1 clove garlic minced
- ¼ tsp black pepper ground
Instructions
- Preheat oven to 375 °F.
- Add all the ingredients to a medium bowl and mix until well combined.
- Shape the mixture into a loaf and place on a lined baking pan. Bake for 20 minutes.
- Remove from the oven and brush generously with more ketchup or barbeque sauce. Bake for another 10 minutes.
- Let stand 5 minutes before serving.
Notes
- Adjust ketchup or barbecue sauce amounts if using larger (16oz) packages of Impossible beef for balanced flavor and moisture.
- When doubling or tripling, increase baking time by 10 minutes per additional pound and consider using loaf pans for portioning.
- For personal servings, divide the mixture into mini loaf pans and bake accordingly.
