  • 1 tablespoon water
  • ¾ -1 cup cheddar cheese shredded
  • salt to taste
  • black pepper to taste
  • cherry tomato quartered, for serving
  • parsley for serving, chopped

Instructions

  1. Heat a medium nonstick skillet over medium heat.
  2. Crack and beat eggs with water in a small bowl.
  3. Sprinkle the shredded cheese to the entire surface of the pan. When the cheese starts to melt, pour the whisked eggs on top of the cheese.
  4. Lower the heat to low, and tilt and rotate the skillet to allow the eggs to cover the cheese and to cook through, about 3-4 minutes.
  5. Place a spatula under half the omelette and fold over. Slide onto a plate, season with salt and pepper, and serve with tomatoes and parsley, if desired.

Notes

  • This omelette is best eaten immediately but can be refrigerated in an airtight container for up to 2 days.
