Instant Pot Apple Butter

Instant Pot Apple Butter uses chopped apples cooked under high pressure with sugar, apple cider vinegar, cinnamon, and vanilla extract to produce a smooth, thick spread. The slow reduction after pressure cooking deepens the flavor and thickens the texture, resulting in a rich apple butter suitable for spreading on breads and more.

Description

Instant Pot Apple Butter starts by combining cored and chopped apples with sugar, apple cider vinegar, water, cinnamon sticks, ground cinnamon, salt, and vanilla extract in an Instant Pot. The mixture cooks under high pressure for 10 minutes, then naturally releases pressure to soften the apples thoroughly. After pressure cooking, the cinnamon sticks are removed, and the mixture is pureed until smooth.

The puree then simmers in the Instant Pot on low heat with the lid slightly ajar, stirring every 10 minutes for about 45 minutes to reduce and thicken to the desired consistency. The apple butter develops a deep, spiced apple flavor with a smooth, spreadable texture.

This apple butter can be stored in sanitized glass jars in the refrigerator for up to one month or frozen for up to six months. Variations include peeling the apples or adding spices like apple pie or pumpkin pie spice to adjust flavor intensity. It can also be made in a slow cooker or on the stovetop following adapted cooking steps.

Ingredients

Servings
  • 4 pounds apple cored and chopped into small pieces, large
  • 1 cup sugar granulated white
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 2 cinnamon stick
  • 2 tsp ground cinnamon
  • 1/2 tsp salt sea salt
  • 1 tbsp vanilla extract

Instructions

  1. In a 6-quart instant pot add all of your ingredients and stir to combine.
  2. Place the lid on the Instant Pot and turn the knob to the “sealing” position. Press the manual mode on the instant pot and set the time to high pressure for 10 minutes. (It will take about 15 minutes for the pressure to build up inside of the Instant Pot.)
  3. Once the time is up on the Instant Pot, allow the pressure to release naturally for 15 minutes, then turn the knob to "venting" and allow the rest of the pressure to release.
  4. Remove the cinnamon sticks, then use an immersion blender to puree the apples until smooth.
  5. Press the sauté function on the instant pot followed by the "adjust" button to turn the heat to "less." Place the lid back on top of the instant pot but do not screw it back on. Leave it slightly open to allow steam to escape. Stir every 10 minutes until the apple butter thickens, about 45 minutes. Turn off the Instant Pot and allow to cool.
  6. The apple butter will thicken even more as it cools. Store in sterilized glass jars in the refrigeator for up to one month.

Notes

  • Leaving the apple peel on adds fiber and pectin, helping thicken the apple butter and adding to its texture.
  • Vanilla extract is optional but enhances the flavor with a rich aroma.
  • Use an immersion blender, food mill, or regular blender to puree apples thoroughly for smoothness.
  • Store apple butter in sanitized glass jars in the refrigerator for up to one month or freeze up to six months for longer preservation.
  • Apples suited for apple butter are typically softer varieties or a mix including Golden Delicious, Fuji, Granny Smith, and others for balanced sweetness and tartness.
  • Alternative cooking methods include slow cooker or stovetop with longer simmering and stirring for thickening.
