  • 4 small chicken breast
  • 1 cup apricot preserves
  • 1 cup Catalina salad dressing (or Russian dressing)
  • 3 tablespoons Dijon mustard
  • 1 package onion soup mix dry

Instructions

  1. Combine apricot preserves, Catalina dressing, dijon mustard, and dry onion soup mix in a small mixing bowl. 
  2. Put 1/3 cup water in the Instant Pot. Place chicken in the water.
  3. Pour apricot mixture over the top of the chicken. Place lid (make sure release tab is set to "sealing") and cook on high pressure for 15 minutes.
  4. Allow to natural release for additional 5 minutes. Quick release and remove chicken. Spoon excess sauce from the Instant Pot over the chicken before serving.
