Description

This recipe uses an Instant Pot to steam whole trimmed artichokes with water on a high pressure setting for 14 minutes. The artichokes are placed on a steamer rack above the water, ensuring even steaming without overcooking. Once pressure is released promptly, the artichokes are tender enough that the petals can be removed without much resistance.

The flavor is mild and slightly nutty, typical of artichokes prepared by steaming. Cooking in the Instant Pot saves time and effort compared to traditional stovetop steaming. Serving the artichokes with favorite dipping sauces enhances their natural taste and makes for a pleasant appetizer or side dish.

Instructions

  1. Prepare, trim and wash the artichokes.
  2. Add water into the Instant Pot insert and then set the steamer rack on the bottom.
  3. Place artichokes on the steamer, put the lid on the Instant Pot and turn the valve to the sealing position. Set to high pressure and select pressure cook / manual pressure for 14 minutes.
  4. When done, perform a complete quick pressure release, open the lid, remove artichokes, and allow to cool for a few minutes before serving with the dipping sauce of your choice.

Notes

  • Perform a quick pressure release immediately after cooking to keep artichokes from becoming mushy.
  • Cook artichokes of similar size together for even cooking times.
  • Check doneness by testing if a petal can be easily pulled off without resistance, starting around 25 minutes if unsure.
  • Discard the fuzzy choke inside; only eat petals and the heart.
  • Squeeze lemon juice over cooked artichokes to prevent browning and discoloration.
