The artichokes are placed cut side down on a trivet above the herb mixture.
Cooking under high pressure for 15 minutes followed by natural pressure release softens the artichokes thoroughly. Testing doneness is done by inserting a knife into the base, which should slide in easily when fully cooked. The texture of the cooked artichokes yields tender leaves and a fleshy heart, ideal for pulling off leaves, dipping, and enjoying the delicate flavor.

- 2 Artichoke large
- 2 water
- 1 tablespoon garlic minced
- 1 teaspoon salt
- 1 parsley bunch
Instructions
- Wash and dry your artichokes and then cut about 1 inch off the top to expose the inside.
- Pull off any dry, dead leaves from the outside and discard. Using kitchen shears, snip off the tip of each leaf.
- Pour the water in your Instant Pot and stir in the garlic and salt.
- Place the trivet inside and place the parsley inside, pushing it to the side. Then, place your cleaned artichokes in the pan, cut side down.
- Cover, set the pot to seal, and cook at manual high pressure for 15 minutes. Let steam release naturally.
- Use a knife to poke the bottom of the artichoke. If it goes in easily, it's done!
- Dip the leaves in melted butter or your favorite sauce and enjoy!
