Instant Pot Baked Potatoes
Description
Instant Pot Baked Potatoes offer a hands-off steaming approach where medium potatoes are pricked and placed on a steaming rack above a cup of water inside an electric pressure cooker. The pressure steam cooks the potatoes in about 12 minutes, with a natural pressure release taking around 15 minutes. This cooking method produces potatoes with a tender interior suitable for classic toppings or to be crisped further in an oven if desired.
The steaming process keeps the potatoes moist and evenly cooked, unlike dry baking, and the rack prevents the potatoes from sitting in water. Once pressure is released, potatoes are ready to serve or can be rubbed with oil and salt and baked briefly for a crisp skin.
Common serving ideas include traditional toppings such as butter, sour cream, and bacon, but this recipe also suggests alternatives like Sriracha sauce, blue cheese, harissa hummus, or diced avocado. Adjust cooking time if potato sizes vary: 10 minutes for small and 20 minutes for large potatoes under pressure.
Topping and skin crisping tips include rubbing oil and salt onto the skin and finishing the potatoes in a hot oven for up to 10 minutes. This recipe's notes also provide nutritional points relevant to Weight Watchers.
