The Instant Pot Beef Stew features beef stew meat browned lightly in avocado oil and combined with diced red onion, garlic, dried herbs, and a mixture of root vegetables like carrots, parsnips, and butternut squash. Beef bone broth provides a rich base, infused with herbs such as parsley and oregano, and a bay leaf for added aroma. The stew is cooked under pressure for 15 minutes, followed by a natural release to tenderize the meat and meld flavors.

The resulting stew is hearty with tender beef pieces and softened vegetables contributing texture and sweetness, balanced by the savory broth. For a thicker consistency, the recipe suggests boiling after pressure cooking or adding gluten-free flour or tapioca flour to thicken.

Ingredients

  • 1 Tbsp avocado oil
  • 1 red onion diced, small
  • 2 lbs beef stew meat
  • 3 cloves garlic minced
  • 1 Tbsp parsley dried
  • 1 Tbsp oregano dried
  • 1 tsp salt to taste, sea salt
  • 3 carrot peeled and chopped, large
  • 3 parsnip peeled and chopped, peeled
  • 2 cups butternut squash peeled and chopped
  • 5 cups beef bone broth **
  • 1 bay leaf

Instructions

  1. Turn on your Instant Pot, add the avocado oil, and press the Saute function. Add the chopped onion and saute, stirring occasionally, until onion is transluscent, about 5 minutes. 
  2. Add the beef stew meat and brown 1 to 2 minutes (do not cook through).
  3. Add the remaining ingredients for the stew and stir well. Secure the lid on your Instant Pot and press the Stew/Meat button. Adjust the time setting to 15 minutes. Set to Sealing.
  4. Once the stew has finished cooking, allow it to naturally vent until it completes its cycle (about 20 - 30 minutes). 
  5. For thicker stew, press either Sauté or Boil on your pressure cooker and bring the stew to a full boil. Stir occasionally and allow the stew to boil until it has reached your desired thickness. You can also add 1 to 2 tablespoons of gluten-free all-purpose flour or tapioca flour to help thicken the stew.

Slow Cooker Option:

  1. Add oil to a skillet and heat over medium. Add the onion and saute until translucent, about 5 minutes. Add the stew meat and brown for 2 to 3 minutes. 
  2. Transfer onion and beef to your slow cooker along with the rest of the ingredients for the stew. Stir well and secure the lid on your slow cooker. Cook on low 6 to 8 hours, until beef is nice and tender.

Notes

  • Omit onion and garlic for a low-FODMAP version of this stew.
  • Add extra broth if you prefer a thinner stew consistency.
  • Thicken the stew after cooking by boiling or mixing in gluten-free flour or tapioca flour.
