Description

This beef stew begins with browning stew meat in olive oil under the Instant Pot's saute mode to develop savory flavor and texture. The browned meat is combined with diced onion, minced garlic, quartered potatoes, cut carrots, beef broth, tomato paste, dried thyme, bay leaf, and seasoning. Sealing and cooking the stew under high pressure for 30 minutes softens the meat and vegetables thoroughly.

After pressure release, a portion of the stew liquid is mixed with flour to create a slurry that is whisked back into the pot. Simmering the stew with added frozen peas helps thicken the broth into a glossy, hearty sauce while incorporating fresh vegetable sweetness. A sprinkle of chopped parsley finishes the dish with a touch of color and mild herbaceousness.

  • 1 tablespoon olive oil
  • 2 1/2 pounds beef stew meat
  • salt to taste
  • black pepper to taste
  • 1 onion diced
  • 2 teaspoons garlic minced
  • 1 pound yellow potatoes quartered or halved, small
  • 4 carrot peeled, halved and cut into 1 inch pieces
  • 3 cups beef broth
  • 3 tablespoons tomato paste
  • 1 teaspoon thyme dried leaves
  • 1 bay leaf
  • 1 cup peas frozen
  • 3 tablespoons flour
  • 2 tablespoons parsley chopped

Instructions

  1. Turn the Instant Pot to Saute, then select More. Wait for the pot to heat up, then add the oil. 
  2. Add half of the stew meat to the pot and season with salt and pepper to taste. Cook for 3-4 minutes on each side or until browned. 
  3. Remove the meat from the pot. Repeat with remaining meat.
  4. Place all the meat in the pot along with the onion, garlic, potatoes, carrots, beef broth, tomato paste, dried thyme leave, bay leaf, and salt and pepper to taste.
  5. Stir to combine. Seal the Instant Pot and set it to Manual High Pressure for 30 minutes.
  6. Carefully vent the pressure valve, or let the pressure release manually. 
  7. Remove 1/3 cup of stew liquid from the pot. Add the flour and whisk until smooth.
  8. Pour the flour mixture back into the pot, and turn the pot back to the Saute function. 
  9. Add the peas to the pot. Simmer for 3-5 minutes or until stew has started to thicken.
  10. Sprinkle with parsley, then serve.
