Instant Pot Beef Vegetable Soup
Description
Instant Pot Beef Vegetable Soup begins with browning ground beef and sautéed onions to develop a rich base. Adding diced potatoes and frozen mixed vegetables introduces hearty textures, while canned diced tomatoes and beef broth provide depth and moisture. Italian seasoning contributes herby notes, and salt and black pepper balance the seasoning. Cooking under pressure in the Instant Pot softens the potatoes and melds flavors quickly, resulting in a soup with a tender vegetable mix and well-seasoned beef fragments throughout. The recipe is straightforward, using minimal ingredients to deliver a filling, savory soup.
This soup is simple to serve hot, pairing well with fresh rolls or bread for dipping. The inclusion of ground beef adds protein, while the mixed vegetables and potatoes make it a comforting one-pot meal option during cooler weather. Using frozen vegetables keeps prep time down and adds convenience.
The recipe notes that ground turkey can substitute for ground beef for a leaner option. Leftovers store well in an airtight container in the refrigerator for up to a week, making it a practical make-ahead meal. Reheating can be done gently on the stove or microwave to retain texture.
