  • 5.5 lb turkey breast bone-in
  • 1 tsp black pepper ground
  • 2 tsp garlic salt
  • 1 tsp rubbed sage
  • 1 tsp thyme dried
  • 1/2 tsp smoked paprika
  • 4 tbsp butter
  • 4 tbsp cornstarch
  • 1 cup chicken stock

Instructions

  1. Mix together all of your spices in a small bowl. Set aside.
  2. Remove your turkey breast from the packaging, and remove any and all gravy packets or items that came with the turkey.
  3. Rub your spice mixture all over the turkey breast, so that it is completely covered. Set aside.
  4. Turn your Instant Pot on to SAUTE.
  5. Add the butter to the Instant Pot.
  6. Place your turkey in the Instant Pot breast side down and sear for about 8 minutes.
  7. Remove the turkey from the Instant Pot and set aside.
  8. Pour 1 cup of chicken stock in the bottom of the Instant Pot and scrape the bits from the bottom of the pot to loosen them.
  9. Place the trivet inside the Instant Pot and place the turkey, breast side up in the Instant Pot.
  10. Secure the lid.
  11. Turn the valve to SEALING.
  12. Cook on HIGH PRESSURE for 28 minutes.
  13. Press CANCEL.
  14. NATURALLY RELEASE the pressure, do not quick-release.
  15. Once pressure is released, remove the lid, turkey, and trivet.
  16. Press SAUTE. 
  17. In a separate small bowl, make your cornstarch slurry using cornstarch and 4 tbsp water.
  18. Add them to the Instant Pot and whisk until the gravy has thickened, about 3-5 minutes.

Notes

  • Use two serrated tongs to handle the bone-in turkey breast safely in the Instant Pot.
  • Check that your Instant Pot is large enough for the turkey breast; a 6-quart Instant Pot can hold about 5 pounds comfortably.
  • For turkey breasts larger than 6 pounds, consider using a larger Instant Pot for proper cooking.
