Instant Pot Brisket Sliders with Caramelized Onions
Description
This recipe starts by seasoning a 1½-pound beef brisket with a beef-flavored spice rub, then searing it in olive oil in an Instant Pot set to sauté mode. After browning all sides, including positioning the fatty side up, liquid smoke and beef broth are added, and the pot is sealed to cook the brisket under high pressure for 50 minutes. Natural pressure release ensures the meat remains tender. Once cooked, the brisket is shredded.
Buns are arranged in a baking dish, topped with shredded brisket, caramelized onions, barbecue sauce, provolone cheese, and then covered with the top halves of the buns. A butter mixture with onion and garlic powder is brushed over, and the assembled sliders are baked at 350°F until the cheese melts and the buns crisp and brown.
The sliders feature layers of slow-cooked beef flavor, sweetness from the barbecue sauce and onions, and savory notes from the spices and melted cheese. They work well as a party appetizer or casual meal. The use of an Instant Pot accelerates traditional brisket preparation while preserving depth of flavor and tenderness.
Ingredients
- 1 1/2 lbs beef brisket
- 1-2 Tbsp Spice Rub brand Stubb’s, beef flavor
- 2 Tbsp olive oil
- 1 Tbsp liquid smoke
- 12 slider buns
- 2 c. beef broth
- 2 onion caramelized
- 6 lices provolone cheese
- 1/4 c. barbecue sauce brand Stubb’s, sticky sweet flavor
- 1/4 c. butter melted
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
- Remove brisket from fridge. Pat dry and season with Stubb’s Beef Spice Rub. Return to fridge for 30 minutes.
- Remove from fridge. Turn your Instant Pot to saute. Place olive oil in the bottom of your Instant Pot. Brown Brisket on all sides. Turn brisket so the fatty side is up.
- Add liquid smoke and beef broth. Place cover on Instant Pot and seal.
- Set to Manual and cook for 50 minutes on high pressure. When done cooking let it natural release the pressure.
- Remove brisket from Instant Pot and shred.
- Preheat oven to 350 degrees.
- In a 2 quart baking dish place the bottom of the sliders buns. Top with shredded brisket, Stubb’s Sticky Sweet Bar-B- Q Sauce, caramelized onions, cheese and the top of the bun.
- In a small bowl mix together butter, onion powder and garlic powder. Brush over slider buns.
- Bake from 10-15 minutes or until cheese is melted and buns are golden brown on top.
